El Guambra is a small Ecuadorian counter at Castle Square, open from early morning through the afternoon. The menu centres on hornado, hunks of crispy-skinned slow-roasted pork, alongside strip steak and chorizo, served with llapingacho potato patties, rice, and menestra bean stew. Caldo de manguera, a pork, tripe, and black pudding broth, is one of the more distinctive offerings. Portions are generous and the atmosphere is informal.
